On Tuesdays we always go to a friend's house for dinner and bible study. We rotate between bringing the main dish, salad and desert. This week was my turn for salad...hence the picture of a salad. Those tomatoes came from my garden. Yum Yum! Today I also made some crackers, which was more exciting to write about than a salad. I originally made these crackers for Chloe because she wouldn't eat the rice I made her. Well, she really won't eat anything from a spoon for some reason...stubborn I'm guessing. They ended up being really good and we eat them too. A couple of my mommy friends have made them for their little ones too.
Ingredients:
1 Cup Brown Rice
1/2 Cup Barley
1/2 Cup Millet
1/2 Cup Oats
1/3 Cup Extra Virgin Olive Oil
1/2 Cup Water (more or less)
Optional seasons: Basil, Garlic Powder, Cinnamon, Salt
Combine the brown rice, barley, millet, and oats in a blender and grind to a fine powder. Chloe was napping while I was making these, so I did the grinding in the garage since it is really loud.
Reserve about 1/8 Cup of the powder for rolling out the dough. Mix in the oil then slowly add the water until a dough forms. Add more water as needed until it isn't too crumbly. It can be a little crumbly, but should be able to stay together when formed into a ball. Add any seasonings you want now. This time I split the dough in half and added 1 tsp cinnamon to one half and 1 tsp garlic powder to the other half. Last time I added fresh basil and some garlic powder. The first time I left them plain.
Roll out the dough and cut into squares, or rectangles, or whatever shape makes you happy. A pizza cutter works well for this.
Bake them on a greased cookie sheet at 375 for 20 minutes. Flip them over and bake an additional 5 minutes.
Golden. Brown. Delicious.
